How's something like this for a quick and simple cucumber salad with a touch chili for an extra zing. This would be perfect on a side of grilled meat. Perfect summer dish ~ except I'm not sure we'll ever see summer with how the weather has been lately.
Seems like for every two warm days, we get five colder days. Like tomorrow, winter is coming in more ways than one. Raise your hand ??♀️ if you're a Game of Thrones fan!!?
OK back to my recipe for Chili Cucumber Salad.
GATHER THESE INGREDIENTS:
Ready for this?! Cucumber, Red Onions, Cilantro, Rice Wine Vinegar, Brown Sugar and Dried Chili Pepper.
THAT. IS. ALL!!!!
Can you handle it?
HERE'S HOW WE DO IT!
Thinly cut slices of cucumbers and red onions. Mix rice wine vinegar, brown sugar and dried chili pepper. Pour mixture on top of sliced vegetables. Top with cilantro.
THEN CALL IT A DAY PEOPLE!
You can snack on this! Or like I said, serve it on the side with some grilled meat or Roasted Chicken . Would be awesome on the side with Caramelized Shrimp with 7Up! Or........how about that breakfast recipe of Bacon and Egg with Garlic Fried Rice! Perfecto!!!

Quick salad recipe and goes great with Caramelized Shrimp with 7Up or Bacon and Egg with Garlic Fried Rice! Yummmm!
Ingredients
- 1 Cucumber (thinly sliced)
- ¼ cup Red Onion (thinly sliced)
- ¼ cup Rice Wine Vinegar
- ½t Brown Sugar
- Sprig of Cilantro
- 1 Dried Red Chili Pepper
Instructions
- Cut thin slices of cucumber and red onions; put them in a bowl.
- Mix rice wine vinegar, brown sugar and dried chili pepper.
- Pour mixture on top of sliced cucumbers and onions. Top with cilantro.
